Apple Pie Protein Bars

Friends, happy Monday! We’re at a turning point. This is our first fall recipe this season. We’re also on the downward slope of our Sugar-Free September! How do you feel?!  We’ve got another treat to help you stay sugar-free for the rest of the month!

Apple Pie BARS

This protein bar recipe is a spin on our Cinnamon Protein Breakfast Bars. With fall here and the abundance of apples, we thought to increase the protein and amp up the autumn vibe. We added in nuts, protein powder and extra spice in the midst of the apples for a delicious apple pie flavor! These bars are a delicious sweet snack or a great breakfast on the go. Perhaps the best part is that they are prepared in a blender so preparation and clean up is a breeze.

Apple Pie Protein Bars

These bars are packed with apple pie flavor and tons of protein from beans, eggs, almond milk, protein powder and nuts for the perfect boost of energy. They are extra sweet from the apples and would be perfect to get you through the rest of our sugar-free challenge!

 

Apple Pie Protein Bars

Prep time: 10 mins
Cook time: 45 mins
Total time: 55 mins

1 can Garbanzo Beans, drained and rinsed
1 cup Almond Milk
2 Large Organic Eggs
1 teaspoon Vanilla Extract
1/3 cup Rye Flour or Oat Flour (or gluten-free flour of choice)
1 Tablespoon Vanilla Protein Powder
21/4 teaspoons Cinnamon, divided
1/4 teaspoon Nutmeg
1/3 cup Coconut Sugar, Maple Sugar or Xylitol
1/2 cup Salted Pecans
2 Small Sweet Apples, 1 sliced about ¼ in. thick, 1 chopped

Instructions
  1. Grease a 7 x 11 or 9 x 9 inch baking dish and preheat oven to 350 degrees.
  2. In a high powered blender, blend the beans, almond milk, eggs and vanilla until smooth. Add the spices, reserving ¼ teaspoon of the cinnamon, the sweetener, flour and nuts together and blend until incorporated. Add the chopped apple and blend until well incorporated. You can blend until a bit more smooth or keep apple pieces more intact for more texture. Pour mixture into prepared dish.
  3. Lay the sliced apple pieces over the batter to cover and sprinkle with the ¼ teaspoon cinnamon. Sprinkle with more sweetener if desired.
  4. Cover and bake for 38 minutes, remove cover and bake an additional 5-10 minutes until the center is baked and the apple slices are soft and golden.
Notes
Please use only 1 apple for the chopped pieces and slices if the apple is large.
