It was hard to choose one recipe to remake for today, but we finally settled on making their Rise and Shine Healthy Breakfast Oatmeal Bars!
These bars are so easy to make! They can be made ahead of time to avoid added stress in the mornings. They are chewier and softer than other granola bars so they stay intact a bit better for an on-the-go snack for the car or train. They are the perfect snack or breakfast with a variety of textures to appease the sweet tooth and still give healthy boosts of energy and protein. Sweetened with honey for an incredible flavor and a tiny bit of coconut sugar for a caramelized bite, these bars are the perfect way to begin your morning!
Healthy Oatmeal Breakfast Bars

3/4 cup Walnut Halves and Pieces, roughly chopped
3/4 cup Shredded Coconut
3 tablespoons Whole Wheat Flour
1/2 teaspoon Sea Salt
1/2 teaspoon Cinnamon
3 tablespoons Coconut Oil
3/4 cup Honey
3 tablespoons Coconut Sugar
2 teaspoons Vanilla Extract
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
In a microwave safe bowl, microwave the coconut oil, honey, and coconut sugar for 1 minute and 30 seconds stirring every 15 seconds. Add the vanilla to this mixture and stir to combine. Add to the oat mixture and stir to combine, .
Pour the mixture onto the prepared baking sheet. Press the mixture into a large rectangle and flatten and smooth as needed. Bake the bars for 20-22 minutes or until the bars have become golden and the edges begin to brown and caramelize.
Once done baking, cut into bars when warm. Break bars apart when cooled completely. Store bars stacked with wax or parchment paper in an airtight container for up to 4 days. These bars stay soft so they will stick together if not stored separated with paper.
