This last year in college has been filled with a lot of baking. I like to bake, but as a way to stay sugar-free in my freshmen year, my baking increased. As everyone knows in the college, that means I also have roommates. I’ve been introduced to quite a few amazing recipes from some of them! Some are super tempting and I can’t resist, even if they do have a little sugar in them. Between the four of us, delicious treats are abundant!
One favorite treat was this zucchini bread. This recipe comes from one of my roommates who found it on Pinterest (of course). When I tasted this bread for the first time, I seriously loved it!! I asked for the recipe and made it probably another 3 or 4 times that semesters with natural sugars. Later, when I went to visit Annie, I made sure we made this bread so she could taste it. Since zucchini is ripe now, this bread is the perfect way to use it! We made a few extra alterations to my roommates recipe and found it to be just as good. This zucchini bread is moist, sweet, hearty… divine! With natural sugars and flour, low in fat and hello, contains a VEGETABLE, it’s a real winner in both health benefits and taste!
Healthy Zucchini Bread (dairy-free)
In a mixing bowl, whisk together:
3 cups Spelt Flour
1 teaspoon Sea Salt
1 teaspoon Baking Soda
1 teaspoon Baking Powder
Heaping 2 1/2 teaspoons Ground Cinnamon
In a large bowl, beat together:
3 Large Organic Eggs
1/2 cup Grape seed Oil
1/2 cup Unsweetened Applesauce
2 cups Coconut Sugar*
Heaping 1 Tablespoon Pure Vanilla Extract
Add the dry to the wet and mix until combined. Fold in:
2 cups grated Zucchini
Pre-heat oven to 325 degrees. Pour batter into greased and/or lined bread pans. This recipe will fill 4 mini bread pans or two 9 by 13 bread pans. Bake for about 32-36 minutes for the mini pans and 40-50 minutes for the large pans. Allow to cool for 10 minutes before slicing into. Enjoy!
*I’ve made this recipe using all powdered honey, but it gave the bread a slight honeyish flavor. It was good but it did have a different flavor. Half coconut sugar and half honey powder also work well.

I wonder if one can substitute 1/2 c grated apple for 1/2 c applesauce?

The applesauce provides more liquid while helping to reduce the amount of oil. If you use finely grated apples and added a bit of water, it might be okay. Sorry, we have not tried it. :)
