Peanut Butter Caramel Sauce

Creamy, peanut buttery caramel! What a way to welcome the fall season!

Around this time of year, we start seeing more candies, caramels and chocolates. It’s hard not to indulge when it’s all around!  Why is it so easy?  1 – it’s delicious. 2 – it’s convenient!

Halloween can be nothing but temptations with the nonstop candy stream. Honestly, once you’ve rid your house of the stuff, it quickly replenishes itself!

When we’re busy in the midst of holidays, we don’t always think about what’s healthy… we are more concerned about celebrating and keeping the kids happy. Here is another tasty option besides all the Halloween goodies that is naturally sweetened and totally vegan. You’ll definitely want to try this peanut butter caramel because it’s just as delicious, easy and convenient as the prepackaged candies!  It’s thick and delicious on brownies or ice cream but it may actually be best over fresh sliced apples, bananas or pretzels. Enjoy!!

 

Peanut Butter Caramel Sauce
1/2 cup Honey or Maple Syrup
1/4 cup Coconut Sugar
3 Tablespoons Full Fat Coconut Milk
1/4 cup Natural Creamy Peanut Butter
1 teaspoon Vanilla Extract

In a heat safe bowl, microwave honey or maple syrup and coconut sugar with the coconut milk for 2 minutes, stirring every 15 seconds.. The mixture will bubble and boil, but that’s okay! Add the peanut butter and microwave another 20 seconds. Stir to incorporate completely. Stir in vanilla until caramel sauce is creamy and smooth. Allow to cool slightly and serve.
