Candied Pecans

November 28, 2011

With the holidays in full swing, I am definitely in bake mode. Really though, who isn’t? This is the time to put on your favorite worn apron and get comfy in the kitchen.  Parties and gatherings are calling for pies here and cookies there. With all the Thanksgiving leftovers around, I am finding things to get out of control. I may just have to get myself a new pair of jeans. And fast.

If you’re having trouble fitting into your skinny jeans, take a breather from the usual baked goodies and try this healthier treat. Less carbs, more protein. These healthy roasted nuts are a nice change but just as sweet and satisfying as any traditional baked treat.

Pecans are a favorite nut of mine and these get an added touch of deliciousness with a sweet sugared coating. Candied with a covering of natural sweeteners and cinnamon, they are truly irresistible! You’ll want to remake this recipe all through the holiday season. I sincerely hope you do!

1 Large Egg White
1 Tablespoon Coconut Oil or Grape Seed oil
3 cups Pecans
3/4 cup Coconut Sugar
1/2 teaspoon Pink Sea Salt
1/2 teaspoon Cinnamon

In a bowl, beat egg white and oil until soft peaks. Add pecans to the egg whites and coat well. Add  honey or coconut sugar, salt, and cinnamon. Mix until all pecans are well coated. Spread out nuts on a parchment lined baking dish. Bake at 300 for 30 minutes, stirring every 10 minutes.

Hi Ashley, we don’t have an egg substitute for this recipe, but we are working on another candied nut recipe that is vegan. Stay tuned! :)
