I came up with these cute little bites the other day when I was flipping through a healthy foods magazine filled with salads and other green recipes. I love green salads and green vegetables. But I am also totally LOVING hummus. Together, these bites are a perfect fix for both.
The combination of the fresh cucumber, spicy hummus, and soft mushrooms is so delicious. But these are also delish with tomato and basil! This little treat is perfect for customizing to your liking!
They can be colorful and fun, making them wonderful for parties as a yummy hors d’oeuvres. Or served with a little fruit, a few of these bites make a healthy fresh lunch.
Cucumber Hummus Bites (vegan)
1 Cucumber, cut into slices
Hummus (store bought or your favorite recipe)
Sliced Mushrooms
Sliced Tomato (optional)
Fresh Baby Spinach Leaves (optional)
Fresh Basil Leaves (optional)
Cut the cucumber into slices to your desired thickness, around 1/4-1/2 inch thick. Then spread your favorite hummus on. If you want an extra punch of flavor, go for a spicy hummus. Then place one or two slices of mushrooms (I usually do half of a mushroom for each bite) on top of the hummus. Add to or replace the mushrooms with tomatoes, fresh spinach or fresh basil if desired.
