Chocolate Cookie Dough Truffles

We’ve all had the experience of walking through the mall and just happen to pass by See’s Chocolates.  You look over, already having smelled that beautiful chocolate scent five stores down and gulp at the prospects before you. Do you keep walking? Do you slow down and take a casual quick peek? You must must decide before that darling Grandma begins to hand out samples.
If you didn’t pass on the samples, you no doubt enjoyed every morsel. If you did pass up on them, don’t mourn those chocolate truffles. All is becoming fair today! These healthy truffles will have you forgetting all about See’s.

These rich truffles take only a very short time to make.  And they are filled with all things healthy and raw, covered in chocolate and sprinkled with coconut for good measure! Trust us, you won’t be feeling bad in the slightest!

Chocolate Cookie Dough Truffles
Print Recipe

1 cup Walnuts
1 cup Medjool Dates
1 1/2 teaspoons Vanilla Extract
1/4 teaspoon Almond Extract
1/3 cup plus 1 tablespoon Honey
1/3 cup plus 1 Tablespoon Cocoa Powder
1/3 cup sugar free Chocolate Chips or Chopped Chocolate, melted
Shredded Unsweetened Coconut, for sprinkling

Blend walnuts in food processor until a coarse meal. Add pitted dates and blend well. Add extracts and honey and combine well. Add the cocoa powder and blend until well combined. Melt chocolate in microwave or on the stove. Roll out your dough into 1- 1/2 inch balls. Spoon melted chocolate on top and sprinkle with coconut. Refrigerate for 10 minutes.

You can find Medjool dates at Costco, many health foods stores or order them online.
